DAKOTA DUNES, S.D. – February 23, 2018 –  In a recent study, Tyson Fresh Meats’ Chairman’s Reserve® Prime Pork brand tested 25 percent more tender than other leading brands of pork without added solution.

The study was executed by a third party which compared Chairman’s Reserve Prime Pork to competing brands of various quality levels. The number of loin samples was decided on by using statistical tests to determine the appropriate number needed to detect a difference.

“Two different shear force methods were used to test for tenderness,” said Senior Specialist in Fresh Meat Research, Heather Rode. “The shear force method is an objective measurement. When you ask consumers about meat tenderness, their responses could be very relative—this method gives us precise values that measure the amount of force it takes to cut meat.” 

During the study, measures were taken to ensure factors affecting tenderness were equal. Those factors include product age, cooking temperature and cut location for shear testing.
